| A tradition in Provence is to end the "gros souper" (supper) of Christmas Eve with 13 desserts. In the old days, people collected fruit that they conserved for Christmas. They used to make themselves the nougat with honey and almonds. Some people still now make their own nougat and quince paste. But nowadays, everybody buys the flat bread ("fougasse") at the baker's.
